The best thing I’ve made so far this year was a plate of fried oysters on New Year's Eve. Shucked oysters are shockingly cheap when you buy them by the pound. They were slippery little suckers but held the flour, egg and breadcrumbs they were dredged in, no problem. A quick submersion in a skillet of corn oil and each one plumped up like a balloon. The next step in the process would have been a no-brainer, but I couldn’t stop eating them straight up. Felt a bit ill the next day, but who's to say that wasn't a coincidence. Or the champagne.
