
It's election day and I am beginning to think of Obama in pronoun terms with a capital H. As in, if He doesn't win, I might want to move to Canada.
Spring Pea Soup
1 tablespoon olive oil
1 shallot, minced
20 oz. frozen peas
3 cups chicken or vegetable stock
2 tablespoons grated Parmesan cheese
In a saucepan with a cover, sauté shallot in oil until soft, about 2 minutes. Add frozen peas and stir. Add stock to peas, cover and cook at a simmer for 5 - 10 minutes until peas are tender. Carefully, transfer soup to blender or use immersion blender directly in pot. Blend well. Strain, if you want, to remove skins-- but really, is that lazy? Serve with grated cheese. Serves 4
