The Writer came over for an experimental dinner last night and ate like a champ. Didn’t say a word about the chicken fritters being dry, but when prodded, came through with a legitimate improvement: slaw.It was a perfect-balance suggestion. Appropriate not just for added moisture but because his book (which I just finished) is a sci-fi fantasy gem about warriors who balance bestial, mechanical and human elements to control fighting demons. Battle scenes take place in dark tunnels beneath a futuristically abandoned Las Vegas, and in hot air balloons known as "the sky village."
It’s awesome, and made me think about cooking as a battleground. The perfect recipe has balance too: slaw is a cure-all for the too dry fritter. Dried fruit evens out a salt overkill, and cucumber adds cool crunch. Recipe development. It’s all about finding balance.
