CABIN LIFE "BEEF ON THE GRILL" CONTEST
The Rules: Send us your original recipe. The recipe must be cooked on a grill and beef must play a significant role, whether it’s slathered, smeared, sliced or rolled, marinated or injected... (injected?)
The Prize: 1st prize: a really fancy grill with a burner alongside it, 2nd prize: a less fancy grill, 3rd prize: a weber charcoal grill

“Holy Mole!” Burgers with Avocado Spread
2 eggs
1/4 cup panko
1 tablespoon unsweetened cocoa powder.
1/8 teaspoon cinnamon
1/2 teaspoon cumin
2 1/2 teaspoons salt
1/4 cup ketchup
3 chipotle peppers (from a can), minced fine
1/4 cup minced onion
1 teaspoon minced garlic
2 pounds ground sirloin
2 avocados
2 tablespoons lime juice
2 tablespoons chopped cilantro
6 hamburger buns
To make the burgers, In a large mixing bowl, mix together the eggs, panko, cocoa powder, cinnamon, cumin, 2 teaspoons of salt, ketchup, chipotle peppers, onion and garlic. Fold in the meat and stir until thoroughly combined. Handling the meat as little as possible (but still packing firm), form the mixture into six patties. Refrigerate until ready to grill.
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. Brush the hot grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. While burgers are cooking, combine avocado, lime juice and remaining ½ teaspoon salt, and cilantro in a bowl and mash with a fork until almost smooth. During the final minutes of cooking the patties, grill the buns. To assemble, spread a generous amount of avocado spread over the cut sides of the rolls and sandwich a “Holy Mole!” patty in-between.
